Ingredients

  • 4 eggs, beaten until foamy
  • 1 1/2 c. salad oil (Crisco)
  • 2 c. sugar
  • 2 c. pumpkin (regular size can)
  • 1 tsp. vanilla
  • 3 c. flour
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. finely chopped walnuts

Method

  • Cream the first 5 ingredients together.
  • Mix dry ingredients together and add to creamed ingredients.
  • Mix until well blended (2 to 3 minutes) and fold in walnuts.
  • Bake in angel food pan at 350° for 1 hour.
  • You can make this ahead of time because the more moist it becomes, the better it tastes!
  • Slice and serve with whipped cream!
