Ingredients

  • 3 1/2 c. flour
  • 3 c. sugar
  • 1 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 c. pumpkin
  • 1 c. oil
  • 2/3 c. water
  • 4 eggs
  • 1 large bag peanut butter chips
  • 1 c. chopped walnuts

Method

  • In a medium bowl, combine dry ingredients; set aside.
  • In a large bowl, blend pumpkin, oil, water and eggs.
  • Gradually add dry ingredients until well blended.
  • Stir in peanut butter chips and nuts.
  • Put batter into 3 greased and floured loaf pans.
  • Bake at 350° for approximately 1 hour or until toothpick comes out clean. Cool loaves in pan 10 minutes.
  • Take out and cool completely on racks.
