Ingredients
- 4 eggs
- 2 c. pumpkin
- 2/3 c. water
- 1 c. salad oil
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 1/2 tsp. salt
- 2 tsp. soda
- 3 c. sugar
- 3 1/2 c. flour
- 2 tsp. pumpkin spice
- 1/2 c. nuts (if desired)
Method
- Beat eggs, pumpkin, water, oil and vanilla.
- Beat well.
- Add sugar and beat.
- Sift dry ingredients and add to pumpkin mixture, beating until well blended.
- Grease and flour 4 bread pans, 9 x 5 x 3-inch.
- Bake 1 hour at 350°.
- Leave in pan about 10 minutes before turning out.
- Batter will be thin.
- Use ladle.
- This bread freezes extremely well if packaged airtight.
