Ingredients

  • 4 eggs
  • 2 c. pumpkin
  • 2/3 c. water
  • 1 c. salad oil
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 2 tsp. soda
  • 3 c. sugar
  • 3 1/2 c. flour
  • 2 tsp. pumpkin spice
  • 1/2 c. nuts (if desired)

Method

  • Beat eggs, pumpkin, water, oil and vanilla.
  • Beat well.
  • Add sugar and beat.
  • Sift dry ingredients and add to pumpkin mixture, beating until well blended.
  • Grease and flour 4 bread pans, 9 x 5 x 3-inch.
  • Bake 1 hour at 350°.
  • Leave in pan about 10 minutes before turning out.
  • Batter will be thin.
  • Use ladle.
  • This bread freezes extremely well if packaged airtight.
