Ingredients

  • Enough focaccia bread to make 24 2" squares
  • 1 1/2 cups of left over smoked pulled pork
  • 1 1/2 cups of your favorite tomato based BBQ sauce
  • 1 1/2 cups crushed Italian tomatoes
  • Sharp white cheddar cheese
  • Smoked yellow cheddar cheese
  • 1 medium Red onion sliced thin 1" long

Method

  • Preheat oven to 425F.
  • Combine BBQ sauce and tomatoes in a sauce pan and bring to a simmer. Simmer, uncovered for 20-30 minutes to desired thickness. Meanwhile shred your cheese, chop your onions and cut your bread. Once the sauce is cooked, pour half of it into a container and reserve. Add the pulled pork to the remaining sauce. It should be just enough sauce to coat all the meat. Adjust meat and/or sauce to get the right consistency. Warm the pulled pork through on low heat, covered and stirring frequently. Once warmed through kill the heat and leave covered.
  • Now it is time to assemble our bites. Take a piece of bread and place a Tbs of sauce on it. Add some sharp cheddar, 1 Tbs of pulled pork, red onion and topped off with the smoked cheddar.
  • Bake on a sheet pan until cheese is bubbly and bread is golden brown.
