Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1/2 cup cooked rice
  • 2 None green onions, finely chopped, plus additional to serve
  • 1 None egg, lightly beaten
  • 2/3 cup spicy salsa
  • 1 tbsp taco spice mix
  • 1 clove garlic, crushed
  • 3/4 cup crumbled feta cheese

Method

  • Preheat the oven to 350°F. Line an 8 x 4 inch loaf pan with foil, extending the foil over long sides for handles. Place on a baking pan.
  • Mix ground beef, beans, rice, onions, egg, 1/3 cup of the salsa, taco spice mix and garlic in a large bowl until well blended. Season to taste. Press mixture into prepared pan.
  • Bake 30-35 mins. Remove meatloaf from oven. Drain any excess juice. Using foil handles, transfer meatloaf from loaf pan to baking pan. Top with remaining 1/3 cup salsa. Sprinkle with feta. Bake 15 mins. Let stand 5 mins before slicing. Sprinkle top with additional green onions.
