Ingredients
- 4 shoulder, loin or rib lamb chops
- 4 Tbsp. olive oil
- 2 cloves garlic
- juice of 1 lemon
- 2 Tbsp. red wine vinegar
- 1 tsp. chopped thyme
- Montrachet or similar goat cheese
Method
- Mix all ingredients together except cheese.
- Marinate chops in marinade and let stand at least 2 hours (ideally overnight or all day in refrigerator).
- Grill or broil to desired doneness on each side.
- Do not overcook.
- Immediately place 2 tablespoons of cheese on top and let melt.
- Serve with a hearty red wine, salad and crusty bread.
