Ingredients

  • 4 shoulder, loin or rib lamb chops
  • 4 Tbsp. olive oil
  • 2 cloves garlic
  • juice of 1 lemon
  • 2 Tbsp. red wine vinegar
  • 1 tsp. chopped thyme
  • Montrachet or similar goat cheese

Method

  • Mix all ingredients together except cheese.
  • Marinate chops in marinade and let stand at least 2 hours (ideally overnight or all day in refrigerator).
  • Grill or broil to desired doneness on each side.
  • Do not overcook.
  • Immediately place 2 tablespoons of cheese on top and let melt.
  • Serve with a hearty red wine, salad and crusty bread.
