Ingredients
- 2 c. sugar
- 1 Tbsp. flour
- 1 Tbsp. cornmeal
- 4 eggs, beaten
- 1/4 c. butter, melted
- 1/4 c. milk
- 1/4 c. lemon juice
- rind of 1 1/2 lemons, grated
- 1 (9-inch) pie shell, unbaked
Method
- In a large bowl, toss sugar, flour and cornmeal with a fork. Add remaining ingredients and mix well.
- Pour into pie shell and bake at 450° for 10 minutes. Reduce heat to 350° and bake for 30 minutes.
- Serve at room temperature or slightly chilled.
