Ingredients
- 4 slices bacon, cooked
- 4 medium potatoes, peeled
- 1/4 c. chopped onion
- 1/4 c. water
- 1/2 c. mayonnaise or salad dressing
- 1/3 c. sour cream
- 1/2 c. shredded Cheddar cheese
- 1/2 tsp. salt
- dash of pepper
Method
- Crumble bacon and set aside.
- Slice potatoes into 1 1/2-quart casserole.
- Add onion and water.
- Cover with lid and microwave on High 12 to 14 minutes, stirring halfway through cooking time. Drain.
- Combine remaining ingredients.
- Add to potatoes; mix lightly to combine.
- Sprinkle bacon over top.
- Microwave on High 1 1/2 to 2 minutes to heat through.
