Ingredients

  • 4 slices bacon, cooked
  • 4 medium potatoes, peeled
  • 1/4 c. chopped onion
  • 1/4 c. water
  • 1/2 c. mayonnaise or salad dressing
  • 1/3 c. sour cream
  • 1/2 c. shredded Cheddar cheese
  • 1/2 tsp. salt
  • dash of pepper

Method

  • Crumble bacon and set aside.
  • Slice potatoes into 1 1/2-quart casserole.
  • Add onion and water.
  • Cover with lid and microwave on High 12 to 14 minutes, stirring halfway through cooking time. Drain.
  • Combine remaining ingredients.
  • Add to potatoes; mix lightly to combine.
  • Sprinkle bacon over top.
  • Microwave on High 1 1/2 to 2 minutes to heat through.
