Ingredients
- 6 large potatoes
- 1 bunch green onions
- 1 1/2 c. Cheddar cheese
- 1/4 tsp. pepper
- 1 large carton sour cream
- 1 1/2 tsp. salt
- paprika
Method
- Cook potatoes in jackets until fork-tender. Peel, then shred into a large bowl.
- Stir in sour cream, onions, 1 cup cheese, salt and pepper. Turn into a greased casserole dish. Top with the 1/2 cup cheese and paprika.
- Cover and refrigerate several hours or overnight.
- Bake uncovered at 350° for about 40 minutes or until heated thoroughly. Yields 8 to 10 servings.
