Ingredients

  • 5 medium-size potatoes
  • 3/4 c. butter or margarine
  • 1 c. Italian style bread crumbs
  • 1/2 c. chopped onion
  • 1/2 c. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Method

  • Preheat oven to 325°.
  • Peel potatoes.
  • Dice into 1/2-inch cubes, about 8 cups.
  • Melt 1/2 cup of butter.
  • Cool and pour into plastic bag.
  • Add potatoes, bread crumbs and onion.
  • Shake until potatoes are evenly coated.
  • Line a 14 x 10-inch baking pan with foil.
  • Pour potatoes in.
  • Dot with butter.
  • Sprinkle with cheese. Bake uncovered until potatoes are soft, about 45 minutes.
