Ingredients
- 5 medium-size potatoes
- 3/4 c. butter or margarine
- 1 c. Italian style bread crumbs
- 1/2 c. chopped onion
- 1/2 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Method
- Preheat oven to 325°.
- Peel potatoes.
- Dice into 1/2-inch cubes, about 8 cups.
- Melt 1/2 cup of butter.
- Cool and pour into plastic bag.
- Add potatoes, bread crumbs and onion.
- Shake until potatoes are evenly coated.
- Line a 14 x 10-inch baking pan with foil.
- Pour potatoes in.
- Dot with butter.
- Sprinkle with cheese. Bake uncovered until potatoes are soft, about 45 minutes.
