Ingredients
- 2 Tbsp. butter or margarine
- 1/2 c. chopped onion
- 6 medium potatoes, peeled and sliced
- 2 medium carrots, peeled and diced
- 1/2 c. diced celery
- 1 can tuna, drained
- 4 c. milk
- salt and pepper to taste
- minced parsley
Method
- Melt butter in large saucepan.
- Saute onion until transparent. Add potatoes, carrots, celery and 2 cups water.
- Bring to a boil.
- Cover and simmer 25 to 30 minutes or until vegetables are tender, stirring constantly.
- Add tuna and milk.
- Heat through. Season to taste and serve sprinkled with parsley.
- Serves 8.
