Ingredients

  • 2 Tbsp. butter or margarine
  • 1/2 c. chopped onion
  • 6 medium potatoes, peeled and sliced
  • 2 medium carrots, peeled and diced
  • 1/2 c. diced celery
  • 1 can tuna, drained
  • 4 c. milk
  • salt and pepper to taste
  • minced parsley

Method

  • Melt butter in large saucepan.
  • Saute onion until transparent. Add potatoes, carrots, celery and 2 cups water.
  • Bring to a boil.
  • Cover and simmer 25 to 30 minutes or until vegetables are tender, stirring constantly.
  • Add tuna and milk.
  • Heat through. Season to taste and serve sprinkled with parsley.
  • Serves 8.
