Ingredients
- 3/4 c. sugar
- 4 Tbsp. cornstarch
- 1/4 tsp. salt
- 3 eggs, separated
- 3/8 c. lemon juice
- 1 1/2 c. water
Method
- Combine sugar, cornstarch and salt in pan, mix well, and add egg yolks, lemon juice and water.
- Beat with whisk until smooth. Place over medium heat, bring to boil, cook, stirring briskly, until clear and thickened.
- Cook 5 minutes, then pour in baked pie shell.
- Use egg whites for meringue.
