Ingredients
- 5 lb. potatoes, peeled and diced
- 1 onion chopped
- 1 can cream of celery soup
- 1/2 lb. Velveeta cheese
- 1/2 tsp. thyme
- dash salt/pepper
Method
- Barely cover potatoes & onions with water, boil for 20 minutes or until mixture starts to thicken.
- Add cream of celery soup and bring to a boil.
- Add cheese, thyme, salt & pepper.
- Cook until creamy.
- Serve with bacon bits, chives or sour cream.
