Ingredients

  • 1/4 c. oil
  • 2 Tbsp. cider vinegar
  • 1 1/2 tsp. salt
  • pepper to taste
  • 2 hard-boiled eggs
  • 1 c. chopped black olives
  • 1 c. sliced celery
  • 1/2 red onion, chopped
  • 1/4 c. dill pickles, chopped
  • 1/2 c. mayo

Method

  • Cook potatoes.
  • In the meantime, in a bowl, add oil, cider vinegar, salt and pepper.
  • After potatoes are cooked, drain.
  • Put into large bowl and pour bowl of oil, cider vinegar, salt and pepper over hot potatoes.
  • Let cool.
  • Then add hard-boiled eggs, chopped, and the rest of ingredients.
  • Serve.
