Ingredients

  • Duck thighs, wings and drumsticks (two each)
  • 1 tablespoon canola oil (or olive oil)
  • 1 shallot, finely chopped
  • 1/4 cup marsala
  • 3-4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon orange zest
  • 1 1/2 cup low sodium soy sauce
  • 1/ 1/2 cup water
  • 1 cup brown sugar

Method

  • In a medium-sized sauce pan (3 qt.) heat cooking oil. Add shallots, cooking until tender. Add marsala and reduce by one half. Add ginger, garlic and orange zest, cooking for two more minutes. Add soy sauce, water and brown sugar. Still to dissolve sugar. Bring to a boil, Add duck pieces. Simmer for 20 minutes. Preheat oven to 350. Transfer duck pieces to baking sheet. Bake duck for 20 minutes. Serve while warm.
