Ingredients
- 5 or 6 medium potatoes
- 1/4 c. butter
- 1/4 c. chopped onion
- 1/4 tsp. pepper
- 1 1/2 c. sharp Cheddar cheese, shredded
- 2 c. sour cream
- 1 tsp. salt
- 2 tsp. butter
Method
- Cook potatoes with skins; after potatoes are cooked, not too soft, peel them and cube.
- In saucepan over low heat, combine cheese and 1/4 cup butter.
- Stir until almost melted.
- Remove from heat; blend in sour cream, salt, pepper and onions.
- Add potatoes. Mix lightly; pour into buttered 2-quart casserole.
- Dot with 2 teaspoons butter.
- Bake 25 minutes at 350° or until lightly brown. Delicious!
