Ingredients

  • 5 or 6 medium potatoes
  • 1/4 c. butter
  • 1/4 c. chopped onion
  • 1/4 tsp. pepper
  • 1 1/2 c. sharp Cheddar cheese, shredded
  • 2 c. sour cream
  • 1 tsp. salt
  • 2 tsp. butter

Method

  • Cook potatoes with skins; after potatoes are cooked, not too soft, peel them and cube.
  • In saucepan over low heat, combine cheese and 1/4 cup butter.
  • Stir until almost melted.
  • Remove from heat; blend in sour cream, salt, pepper and onions.
  • Add potatoes. Mix lightly; pour into buttered 2-quart casserole.
  • Dot with 2 teaspoons butter.
  • Bake 25 minutes at 350° or until lightly brown. Delicious!
