Ingredients
- 2 c. diced onion
- 1 c. rendered bacon
- 1/2 c. heavy cream
- 5 lb. diced potatoes, steamed
- 1/2 lb. whole butter
- 4 oz. cut chives
- 2 eggs
Method
- Saute bacon over medium heat until bacon is almost cooked. Add onion and cook until soft.
- Add cream and chives.
- In mixer, beat potatoes until they are just crumbly; add cream mixture and eggs.
- Roll in parchment paper and slice into cakes.
- Saute in a little oil until brown on both sides.
