Ingredients
- 3 Tbsp. butter
- 3 c. sliced leek onions
- 3 Tbsp. flour
- 2 qt. hot water or 6 c. hot water plus 2 c. milk, which is added at end
- 1/2 c. whipped cream or sour cream
- 1 Tbsp. salt
- pepper to taste
- 4 c. peeled roughly chopped potatoes
- 2 Tbsp. parsley
Method
- Melt butter; add onions and leeks.
- Cover and simmer for 5 minutes.
- Blend in flour 2 minutes; gradually add 1 cup hot water. Blend thoroughly.
- Add vegetables and rest of water.
- Stir and add salt and pepper.
- Cook 40 minutes.
- Now, add 2 cups milk and sour cream before serving.
