Ingredients

  • 3 Tbsp. butter
  • 3 c. sliced leek onions
  • 3 Tbsp. flour
  • 2 qt. hot water or 6 c. hot water plus 2 c. milk, which is added at end
  • 1/2 c. whipped cream or sour cream
  • 1 Tbsp. salt
  • pepper to taste
  • 4 c. peeled roughly chopped potatoes
  • 2 Tbsp. parsley

Method

  • Melt butter; add onions and leeks.
  • Cover and simmer for 5 minutes.
  • Blend in flour 2 minutes; gradually add 1 cup hot water. Blend thoroughly.
  • Add vegetables and rest of water.
  • Stir and add salt and pepper.
  • Cook 40 minutes.
  • Now, add 2 cups milk and sour cream before serving.
