Ingredients

  • 2 c. boiled potatoes
  • 1 tsp. salt
  • 1 Tbsp. chopped parsley
  • 1/2 c. all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 tsp. grated onion
  • 1/2 c. toasted bread cubes
  • 1/2 tsp. baking powder

Method

  • Sift flour and baking powder.
  • In a mixing bowl, combine all other ingredients and add flour mixture, mixing real well.
  • Drop by tablespoons on top of beef stew, chicken soup or sauerkraut, about 1/2 hour before serving.
  • Cover tightly and steam for 25 minutes.
  • Serve dumplings on or around the stew or whatever. Makes 5 servings.
