Ingredients
- 2 c. boiled potatoes
- 1 tsp. salt
- 1 Tbsp. chopped parsley
- 1/2 c. all-purpose flour
- 2 eggs, beaten
- 1 1/2 tsp. grated onion
- 1/2 c. toasted bread cubes
- 1/2 tsp. baking powder
Method
- Sift flour and baking powder.
- In a mixing bowl, combine all other ingredients and add flour mixture, mixing real well.
- Drop by tablespoons on top of beef stew, chicken soup or sauerkraut, about 1/2 hour before serving.
- Cover tightly and steam for 25 minutes.
- Serve dumplings on or around the stew or whatever. Makes 5 servings.
