Ingredients
- 4 tomatoes
- 1 Tbsp. olive oil
- 2 Tbsp. butter
- 1 garlic clove, minced
- 2 Tbsp. minced onion
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. chervil
- 1 Tbsp. chopped parsley
- 1/3 c. grated Parmesan cheese
Method
- Slice tomatoes in half.
- Seed and scoop out pulp.
- Set pulp aside.
- Heat oil in skillet.
- Place tomatoes, cut side down, into oil.
- Cook until the sides are carmelized.
- Remove and place on a pastry sheet.
- Add the butter to the skillet.
- Saute the garlic and onion until tender.
- Stir in seasonings and pulp.
- Saute 1 more minute.
- Fill tomato halves; sprinkle with cheese.
- Heat in broiler until brown (about 2 minutes).
