Ingredients

  • 4 tomatoes
  • 1 Tbsp. olive oil
  • 2 Tbsp. butter
  • 1 garlic clove, minced
  • 2 Tbsp. minced onion
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. chervil
  • 1 Tbsp. chopped parsley
  • 1/3 c. grated Parmesan cheese

Method

  • Slice tomatoes in half.
  • Seed and scoop out pulp.
  • Set pulp aside.
  • Heat oil in skillet.
  • Place tomatoes, cut side down, into oil.
  • Cook until the sides are carmelized.
  • Remove and place on a pastry sheet.
  • Add the butter to the skillet.
  • Saute the garlic and onion until tender.
  • Stir in seasonings and pulp.
  • Saute 1 more minute.
  • Fill tomato halves; sprinkle with cheese.
  • Heat in broiler until brown (about 2 minutes).
