Ingredients
- 2 cups mashed potatoes (without any milk)
- 2 eggs
- salt and pepper
- vegetable oil (for frying)
Method
- Beat eggs and mix into the mashed potatoes.
- Salt and pepper to taste.
- Drop from a spoon into the hot oil (375 F.) and fry until golden brown.
- (2-3 min).
- Drain on paper towels.
- if the spoon is dipped into boiling water in between every use, each drop will retain the shape of the spoon.
