Ingredients
- 3 eggs
- 1 1/3 c. sugar
- 1 tsp. vanilla
- 1 c. cool, mashed potatoes
- 4 c. flour
- 2 Tbsp. oil
- 6 tsp. baking powder
- 2 tsp. nutmeg
- 1 tsp. salt
- 1/2 c. milk
Method
- Beat eggs with sugar and vanilla until light.
- Add potatoes and oil.
- Sift dry ingredients.
- Add alternately with milk to potato mixture, beating well.
- Chill dough 3 hours.
- Fry in deep, hot fat (375°) for 1 minute on each side.
- Drain.
- Dip in sugar. Makes about 2 to 2 1/2 dozen.
