Ingredients

  • 1 lb. (4 sticks) butter, softened
  • 1 c. granulated sugar
  • 3 1/4 c. all-purpose flour
  • 1 tsp. vanilla extract
  • 1 1/2 c. coarsely crushed ridged potato chips
  • confectioners sugar (optional)

Method

  • Preheat oven to 300°.
  • Cream butter and sugar.
  • Slowly blend in flour and vanilla.
  • Gently fold in potato chips.
  • Drop by well-rounded teaspoonfuls onto ungreased cookie sheets.
  • Wet a fork to prevent sticking; flatten cookie gently.
  • Bake 15 to 20 minutes until just barely browned.
  • Cool.
  • Sprinkle with confectioners sugar.
