Ingredients
- 1 lb. (4 sticks) butter, softened
- 1 c. granulated sugar
- 3 1/4 c. all-purpose flour
- 1 tsp. vanilla extract
- 1 1/2 c. coarsely crushed ridged potato chips
- confectioners sugar (optional)
Method
- Preheat oven to 300°.
- Cream butter and sugar.
- Slowly blend in flour and vanilla.
- Gently fold in potato chips.
- Drop by well-rounded teaspoonfuls onto ungreased cookie sheets.
- Wet a fork to prevent sticking; flatten cookie gently.
- Bake 15 to 20 minutes until just barely browned.
- Cool.
- Sprinkle with confectioners sugar.
