Ingredients
- 2 lb. peeled shrimp
- 1/2 lb. filet of catfish
- 1/2 pt. shelled oysters
- 1/2 c. flour
- 1 c. celery
- 2 c. chopped onions
- 4 cloves chopped garlic
- 1 gal. water
- 1/2 c. oil
- 1/2 tsp. parsley
Method
- Make roux with flour and oil.
- Add onions and chopped celery to roux.
- Cook until onions are wilted; add water and garlic. Cook in heavy pot for 1 hour.
- Season to taste with salt, black and red peppers.
- Add shrimp, parsley and fish.
- Cook another 10 minutes.
- Add oysters; let come to boil.
- Serve in soup plate with cooked rice.
- Serves 6.
