Ingredients

  • 2 lb. peeled shrimp
  • 1/2 lb. filet of catfish
  • 1/2 pt. shelled oysters
  • 1/2 c. flour
  • 1 c. celery
  • 2 c. chopped onions
  • 4 cloves chopped garlic
  • 1 gal. water
  • 1/2 c. oil
  • 1/2 tsp. parsley

Method

  • Make roux with flour and oil.
  • Add onions and chopped celery to roux.
  • Cook until onions are wilted; add water and garlic. Cook in heavy pot for 1 hour.
  • Season to taste with salt, black and red peppers.
  • Add shrimp, parsley and fish.
  • Cook another 10 minutes.
  • Add oysters; let come to boil.
  • Serve in soup plate with cooked rice.
  • Serves 6.
