Ingredients

  • 1 1/2 lb. potatoes
  • 3 oz. cream cheese
  • 1/4 lb. Cheddar cheese, cut in cubes
  • 1 c. creamed cottage cheese
  • 2 Tbsp. butter
  • 1/4 c. milk
  • 2 tsp. dried chives
  • 1 Tbsp. parsley
  • 1/2 tsp. white pepper
  • paprika

Method

  • Peel, cube, boil and drain potatoes.
  • Place in food processor and puree until smooth.
  • Add remaining ingredients, except paprika, and continue processing until smooth.
  • You may have to do this in batches.
  • Spoon mixture into buttered 1-quart baking dish. Sprinkle top with paprika.
  • Bake at 350° for 30 to 40 minutes, until piping hot.
  • Serves 6.
