Ingredients
- 1 1/2 lb. potatoes
- 3 oz. cream cheese
- 1/4 lb. Cheddar cheese, cut in cubes
- 1 c. creamed cottage cheese
- 2 Tbsp. butter
- 1/4 c. milk
- 2 tsp. dried chives
- 1 Tbsp. parsley
- 1/2 tsp. white pepper
- paprika
Method
- Peel, cube, boil and drain potatoes.
- Place in food processor and puree until smooth.
- Add remaining ingredients, except paprika, and continue processing until smooth.
- You may have to do this in batches.
- Spoon mixture into buttered 1-quart baking dish. Sprinkle top with paprika.
- Bake at 350° for 30 to 40 minutes, until piping hot.
- Serves 6.
