Ingredients
- 8 medium potatoes
- salt and pepper to taste
- 1 (8 oz.) pkg. cream cheese
- 2 eggs, beaten
- 2 Tbsp. flour
- 2 Tbsp. parsley
- 1 medium sweet Vidalia onion
- 1 small can Durkee French fried onion rings
Method
- Cook potatoes and mash.
- Add salt and pepper and cream cheese; beat.
- Add eggs, flour, parsley and onions; mix well.
- Put in 2-quart buttered dish.
- Sprinkle onion rings and bake, uncovered, at 325° about 30 minutes.
