Ingredients
- 10 slices bacon
- 1 c. chopped onion
- 3 c. cubed peeled potatoes
- 1 1/2 c. water
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 3/4 c. milk
- dash of salt and pepper
Method
- Fry bacon until crisp in a large saucepan.
- Add onion and saute 2 to 3 minutes.
- Pour off fat.
- Add potatoes and water. Bring to boil.
- Cover and simmer 20 minutes or until potatoes are tender.
- Stir in soup and sour cream.
- Gradually add milk, salt and pepper.
- Heat again to serving temperature (do not boil).
- Add parsley flakes when serving.
