Ingredients

  • 10 slices bacon
  • 1 c. chopped onion
  • 3 c. cubed peeled potatoes
  • 1 1/2 c. water
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 3/4 c. milk
  • dash of salt and pepper

Method

  • Fry bacon until crisp in a large saucepan.
  • Add onion and saute 2 to 3 minutes.
  • Pour off fat.
  • Add potatoes and water. Bring to boil.
  • Cover and simmer 20 minutes or until potatoes are tender.
  • Stir in soup and sour cream.
  • Gradually add milk, salt and pepper.
  • Heat again to serving temperature (do not boil).
  • Add parsley flakes when serving.
