Ingredients
- 2 1/2 lb. beef roast
- 1 c. water
- 1 c. tomatoes, chopped
- 5 carrots
- salt and pepper to taste
- 2 Tbsp. fat
- 3/4 c. black coffee
- 1 onion, sliced
- 2 c. potatoes
Method
- Brown meat on all sides in hot fat.
- Pour water and coffee over roast.
- Add salt and pepper.
- Bring to a brisk boil.
- Reduce heat and simmer 40 minutes.
- Add tomatoes, onion and carrots.
- Simmer 20 minutes.
- Add potatoes and simmer until vegetables are tender.
