Ingredients

  • 2 1/2 lb. beef roast
  • 1 c. water
  • 1 c. tomatoes, chopped
  • 5 carrots
  • salt and pepper to taste
  • 2 Tbsp. fat
  • 3/4 c. black coffee
  • 1 onion, sliced
  • 2 c. potatoes

Method

  • Brown meat on all sides in hot fat.
  • Pour water and coffee over roast.
  • Add salt and pepper.
  • Bring to a brisk boil.
  • Reduce heat and simmer 40 minutes.
  • Add tomatoes, onion and carrots.
  • Simmer 20 minutes.
  • Add potatoes and simmer until vegetables are tender.
