Ingredients
- 1 1/2 lb. Polish sausage, sliced
- 5 c. water, divided
- 2 carrots, sliced
- 1/2 head cabbage, coarsely chopped
- 1 medium onion, chopped
- 2 medium potatoes, diced
- 1/2 green pepper, chopped
- 1 garlic clove, finely chopped (optional)
- 1 (8 oz.) can tomato juice or vegetable juice
- 2 cans kidney beans, drained and washed
Method
- Simmer sausage in 2 cups boiling water for 30 to 45 minutes. Add remaining ingredients, except kidney beans, and simmer for 1 to 1 1/2 hours.
- Add kidney beans last and heat through.
- Yield: 10 servings.
