Ingredients

  • 1 1/2 lb. Polish sausage, sliced
  • 5 c. water, divided
  • 2 carrots, sliced
  • 1/2 head cabbage, coarsely chopped
  • 1 medium onion, chopped
  • 2 medium potatoes, diced
  • 1/2 green pepper, chopped
  • 1 garlic clove, finely chopped (optional)
  • 1 (8 oz.) can tomato juice or vegetable juice
  • 2 cans kidney beans, drained and washed

Method

  • Simmer sausage in 2 cups boiling water for 30 to 45 minutes. Add remaining ingredients, except kidney beans, and simmer for 1 to 1 1/2 hours.
  • Add kidney beans last and heat through.
  • Yield: 10 servings.
