- 4 cod fillets
- 1/8 tsp. pepper
- 1 onion, chopped
- 1 clove garlic, minced
- 1/4 c. fresh parsley, minced
- 1 sprig fresh thyme
- 3 tomatoes, peeled, seeded and chopped
- 1/2 c. white wine
- 1/4 tsp. salt
- 1 bay leaf
- 1 or 2 shots Tabasco sauce
Method
- Season cod with pepper and place in skillet. Add remaining ingredients and bring to a boil.
- Reduce heat and simmer, covered, for about 10 to 12 minutes. Remove cod pieces and keep warm. Continue to cook sauce for about 5 minutes.
- Pour over fish and serve.
