Ingredients

  • 4 cod fillets
  • 1/8 tsp. pepper
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/4 c. fresh parsley, minced
  • 1 sprig fresh thyme
  • 3 tomatoes, peeled, seeded and chopped
  • 1/2 c. white wine
  • 1/4 tsp. salt
  • 1 bay leaf
  • 1 or 2 shots Tabasco sauce

Method

  • Season cod with pepper and place in skillet. Add remaining ingredients and bring to a boil.
  • Reduce heat and simmer, covered, for about 10 to 12 minutes. Remove cod pieces and keep warm. Continue to cook sauce for about 5 minutes.
  • Pour over fish and serve.
