Ingredients

  • 1 pound ground pork
  • 1/3 cup dried breadcrumbs
  • 4 spring onions thinly sliced
  • 1 ounce aged cheddar cheese finely grated
  • 1/2 cup tomato salsa
  • 1 1/2 pounds potatoes peeled, chopped
  • 2 tablespoons butter
  • 2 cloves garlic thinly sliced
  • 1/2 cup milk
  • fresh thyme leaves to garnish
  • green beans steamed, to serve

Method

  • Preheat oven to 350°F. Lightly grease an 8-cup muffin pan.
  • In a bowl, combine ground pork, breadcrumbs, 2 spring onions and cheese. Season. Press into muffin pan. Spoon salsa over top. Bake for 15-20 mins, until cooked through and golden. Let rest in pan for 2 mins.
  • Meanwhile, cook potatoes in boiling salted water for 12-15 mins, until tender. Drain and set aside.
  • Add butter to pan. Saute remaining onions and garlic over high heat for 1-2 mins. Return potatoes to pan along with milk. Mash. Season and cook for 1-2 mins over low heat to warm through.
  • Remove meatloaves from pan, retaining juices to drizzle, if desired. Sprinkle with thyme. Serve with mashed potatoes and green beans.
