Ingredients

  • 2 c. water (alternate: use 1 1/2 c. water if adding liqueur or orange juice)
  • 1/2 c. butter
  • 1 package (large box) raisins
  • 1 t. cinnamon
  • 1/4 t. salt
  • 1 t. allspice
  • 1 t. nutmeg
  • 1 t. ginger
  • 1 c. sugar
  • 2 eggs, beaten
  • 1 t. lemon juice
  • 1 t. vanilla
  • 1/2 c. liqueur or orange juice, optional
  • 1 c. walnuts
  • 2 c. flour
  • 1 t. baking soda

Method

  • Preheat oven to 250 degrees.
  • 1. Mix all ingredients on list down through sugar; boil for 15 minutes.
  • 2. Cool mixture and add next 5 ingredients (through walnuts).
  • 3. Sift together dry ingredients; add to mixture.
  • 4. Pour in angel food pan lined with waxed paper.
  • 5. Bake two hours at 250 degrees.
  • 6. Leave in waxed paper. Cool, and wrap cake (still in waxed paper) in a towel. Store in the refrigerator for 2 weeks before serving.
  • TIP: Cut while cold with thin, sharp bade to prevent crumbling.
