- 2 c. water (alternate: use 1 1/2 c. water if adding liqueur or orange juice)
- 1/2 c. butter
- 1 package (large box) raisins
- 1 t. cinnamon
- 1/4 t. salt
- 1 t. allspice
- 1 t. nutmeg
- 1 t. ginger
- 1 c. sugar
- 2 eggs, beaten
- 1 t. lemon juice
- 1 t. vanilla
- 1/2 c. liqueur or orange juice, optional
- 1 c. walnuts
- 2 c. flour
- 1 t. baking soda
Method
- Preheat oven to 250 degrees.
- 1. Mix all ingredients on list down through sugar; boil for 15 minutes.
- 2. Cool mixture and add next 5 ingredients (through walnuts).
- 3. Sift together dry ingredients; add to mixture.
- 4. Pour in angel food pan lined with waxed paper.
- 5. Bake two hours at 250 degrees.
- 6. Leave in waxed paper. Cool, and wrap cake (still in waxed paper) in a towel. Store in the refrigerator for 2 weeks before serving.
- TIP: Cut while cold with thin, sharp bade to prevent crumbling.
