Ingredients
- 2-3 garlic cloves, minced
- 10 fresh green peppercorns, chopped
- 2 tablespoons Extra Virgin olive oil
- 2 lbs fresh Gulf Shrimp, cleaned and deveined
- 8 oz. Lo Mein noodles
- 6 oz. Baby Greens (argula, chard, baby spinach)
- Fresh ground pepper
- Salt
Method
- 1. Prepare Lo mein noodles as instructed.
- 2.Drain but retain 1/2 cup of the water used from noodles. Set aside.
- 3.Heat 2 tablespoon of olive oil in large skillet.
- 4. Sautee peppercorn and garlic until fragrant on medium heat.
- 5. Add shrimp.Cook 4 minutes on med-high heat.
- 6. Add pasta and water. Cook 2 more minutes
- 7. Add baby greens and cook 1 more minute.
- 8. Season with pepper and salt to taste.
- 8.Serve immediately
