Ingredients

  • 2-3 garlic cloves, minced
  • 10 fresh green peppercorns, chopped
  • 2 tablespoons Extra Virgin olive oil
  • 2 lbs fresh Gulf Shrimp, cleaned and deveined
  • 8 oz. Lo Mein noodles
  • 6 oz. Baby Greens (argula, chard, baby spinach)
  • Fresh ground pepper
  • Salt

Method

  • 1. Prepare Lo mein noodles as instructed.
  • 2.Drain but retain 1/2 cup of the water used from noodles. Set aside.
  • 3.Heat 2 tablespoon of olive oil in large skillet.
  • 4. Sautee peppercorn and garlic until fragrant on medium heat.
  • 5. Add shrimp.Cook 4 minutes on med-high heat.
  • 6. Add pasta and water. Cook 2 more minutes
  • 7. Add baby greens and cook 1 more minute.
  • 8. Season with pepper and salt to taste.
  • 8.Serve immediately
