- 1 1/2 c. cooked pinto beans
- 1/2 c. diced onions
- 1/2 c. shredded carrots
- 1/2 c. chopped fresh parsley
- 4 egg whites, lightly beaten
- 2 tbsp. tomato paste
- 1 1/2 tbsp. Dijon mustard
- 1 tbsp. minced mild chili peppers
- 2 cloves garlic, chopped
- 1/4 teaspoon grnd black pepper
- 1 tbsp. uncooked oatmeal
Method
- Place the beans in a food processor or possibly blender and roughly puree with on/off turns.
- Transfer to a large bowl.
- Add in remaining ingredients, mix well.
- Form the mix into 8 patties.
- Brown in a non-stick frying pan over medium heat for 5 min per side, or possibly broil about 5 inches from heat.
- (Weigh servings.)
- Single serving = 4 ounces protein.
