Ingredients

  • 1 1/2 c. cooked pinto beans
  • 1/2 c. diced onions
  • 1/2 c. shredded carrots
  • 1/2 c. chopped fresh parsley
  • 4 egg whites, lightly beaten
  • 2 tbsp. tomato paste
  • 1 1/2 tbsp. Dijon mustard
  • 1 tbsp. minced mild chili peppers
  • 2 cloves garlic, chopped
  • 1/4 teaspoon grnd black pepper
  • 1 tbsp. uncooked oatmeal

Method

  • Place the beans in a food processor or possibly blender and roughly puree with on/off turns.
  • Transfer to a large bowl.
  • Add in remaining ingredients, mix well.
  • Form the mix into 8 patties.
  • Brown in a non-stick frying pan over medium heat for 5 min per side, or possibly broil about 5 inches from heat.
  • (Weigh servings.)
  • Single serving = 4 ounces protein.
