Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. crushed pineapple, drained
  • 1 Tbsp. lemon juice
  • 1/2 c. shortening
  • 1 c. sugar
  • 1 egg
  • 2/3 c. chopped walnuts or 1 tsp. maple flavoring

Method

  • Mix flour, baking soda, baking powder and salt.
  • Cream shortening; add sugar gradually.
  • Add unbeaten egg.
  • Stir in pineapple, walnuts and lemon juice.
  • Add dry ingredients; stir well.
  • Drop by teaspoon onto cookie sheet.
  • Bake at 375° for 12 to 15 minutes.
  • Yields 2 to 3 dozen.
