Ingredients

  • 3/4 c. unsweetened pineapple juice
  • 3/4 c. apple juice
  • 3/4 c. sugar
  • 7 tart, medium apples, peeled, cored and cut in wedges (7 c.)
  • 1/2 tsp. lemon flavoring
  • 1/2 tsp. vanilla flavoring
  • 1 tsp. allspice or apple pie spice
  • 3 Tbsp. cornstarch or flour
  • 1 Tbsp. margarine
  • 1/4 tsp. salt
  • pie crust
  • cinnamon-sugar

Method

  • In large saucepan, combine pineapple juice, 1/2 cup apple juice and the sugar.
  • Bring to boiling.
  • Blend the remaining 1/4 cup apple juice into cornstarch or flour.
  • Add to hot pineapple-apple liquid in saucepan.
  • Cook and stir until mixture thickens and bubbles.
  • Add in apples and cook until near tender. Remove from heat; stir in margarine, vanilla and lemon flavorings, salt and allspice or apple pie spice.
