Ingredients

  • 2 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1/2 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 c. drained crushed pineapple
  • 1/4 tsp. nutmeg
  • 1 Tbsp. sugar

Method

  • Heat oven to 375°.
  • Sift together first 4 ingredients.
  • Mix shortening and next 3 ingredients until creamy.
  • Mix in pineapple, then flour mixture.
  • Drop by teaspoon, 2-inches apart, onto ungreased cookie sheet.
  • Sprinkle cookies with nutmeg and 1 tablespoon sugar, combined.
  • Bake until golden, about 12 minutes. Makes 3 dozen.
