Ingredients

  • 2 beaten eggs
  • 1/3 c. milk
  • 2 slices bacon
  • 3/4 c. diced carrots
  • 2 c. peeled, diced potatoes
  • 1 Tbsp. Parmesan cheese
  • 3 Tbsp. sour cream
  • 1/4 c. sliced green onion
  • 1/2 c. Parmesan cheese

Method

  • In medium saucepan, cook potatoes and carrots, covered, in boiling water for 12 minutes.
  • Drain.
  • Cook bacon; drain, crumble and set aside.
  • In mixer, mash potatoes and carrots with potato masher.
  • Beat in milk until creamy.
  • Stir in eggs, 1/2 cup cheese, onion and sour cream.
  • Put in casserole dish.
  • Bake at 350° for 2 minutes; sprinkle with bacon and cheese.
  • Bake for 15 minutes.
