Ingredients
- 2 beaten eggs
- 1/3 c. milk
- 2 slices bacon
- 3/4 c. diced carrots
- 2 c. peeled, diced potatoes
- 1 Tbsp. Parmesan cheese
- 3 Tbsp. sour cream
- 1/4 c. sliced green onion
- 1/2 c. Parmesan cheese
Method
- In medium saucepan, cook potatoes and carrots, covered, in boiling water for 12 minutes.
- Drain.
- Cook bacon; drain, crumble and set aside.
- In mixer, mash potatoes and carrots with potato masher.
- Beat in milk until creamy.
- Stir in eggs, 1/2 cup cheese, onion and sour cream.
- Put in casserole dish.
- Bake at 350° for 2 minutes; sprinkle with bacon and cheese.
- Bake for 15 minutes.
