- 3 c. flour
- 2 c. sugar
- 2 tsp. cinnamon
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. baking powder
- 1 (8 oz.) can crushed pineapple, drained
- 2 c. carrots, grated
- 3 eggs, beaten
- 1 1/2 c. vegetable oil
- 2 tsp. vanilla
- 1 1/2 c. nuts, chopped
Method
- Mix flour, sugar, cinnamon, baking soda, salt and baking powder.
- Add drained pineapple juice.
- Add well-beaten eggs, oil and vanilla.
- Beat for 3 minutes.
- Batter will be stiff.
- Add pineapple, carrots and nuts and beat well.
- Pour into greased and floured Bundt pan and bake at 325° for 1 1/2 hours.
- Cool and frost.
