Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 c. carrots, grated
  • 3 eggs, beaten
  • 1 1/2 c. vegetable oil
  • 2 tsp. vanilla
  • 1 1/2 c. nuts, chopped

Method

  • Mix flour, sugar, cinnamon, baking soda, salt and baking powder.
  • Add drained pineapple juice.
  • Add well-beaten eggs, oil and vanilla.
  • Beat for 3 minutes.
  • Batter will be stiff.
  • Add pineapple, carrots and nuts and beat well.
  • Pour into greased and floured Bundt pan and bake at 325° for 1 1/2 hours.
  • Cool and frost.
