Ingredients
- 1 large can Luck's black-eyed peas
- 1/2 lb. sausage
- 1/2 c. chopped green pepper
- 1/4 c. chopped onion
- 1 glove garlic, chopped
- 1 can tomatoes (large)
- 1/4 tsp. pepper
- 1/4 tsp. oregano
- 1/4 tsp. rosemary
- 1 c. grated cheese
Method
- Cook sausage in large pan, crumbling with a fork; drain. Add green peppers, onions and garlic. Cook 5 minutes, stirring in sausage. Add tomatoes and seasons; stir well. Pour in black-eyed peas with the liquid. Cover and simmer 15 minutes. Serve with grated cheese on top.
