Ingredients
- 2 eggs
- 1 1/2 c. sugar
- 1 can (1 lb.) crushed pineapple
- 2 1/4 c. flour
- 1 1/2 tsp. soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1/2 c. chopped nuts
- 1 1/4 c. coconut
Method
- Beat eggs and sugar, add undrained pineapple, flour, soda, salt and vanilla.
- Beat well.
- Add nuts and mix well.
- Pour into 11 x 17-inch jelly roll pan.
- Sprinkle coconut on top and bake at 350° for 20 to 25 minutes.
- Remove from oven.
- Spread glaze on top and sprinkle with 1/2 cup chopped nuts.
