Ingredients

  • 1 liter whipping cream (chilled)
  • 165 ml coconut cream (chilled)
  • 1 can condensed milk (385g)
  • 1 cup pina colada cocktail mix
  • 1 small can of pinapple crush (about 1 cup - liquid drained and reserved)
  • 4 tbsp of the pinapple crush liquid / syrup
  • 1 cup finely sliced coconut
  • 1/2 cup crushed Pistacios

Method

  • In a large mixing bowl, Combine chilled cream and coconut cream.
  • (Omit liquid from coconut cream)
  • In a separate bowl, Combine condensed milk and pina colada cocktail mix well then add into cream mixure.
  • Whip mixture.
  • Fold in pinapple crush, syrup and coconut slices.
  • Transfer to freezer safe tupperware.
  • Top with crushed pistachios
  • Freeze overnight / until set.
  • Serve and enjoy
