Ingredients

  • 4 c. basil leaves, lightly packed
  • 1 c. olive oil
  • 3 cloves garlic
  • 1/4 c. parsley
  • salt and pepper to taste
  • 1/2 c. pine nuts, walnuts or almonds
  • 3/4 c. Parmesan cheese
  • dash of white wine (optional)

Method

  • Put basil into blender.
  • Add rest of ingredients, except cheese.
  • Finely chop, punching down as needed.
  • Add additional oil, if necessary, to attain a loose paste that is not too soupy or runny.
  • Remove from blender into bowl.
  • Add cheese.
  • Great over pasta, fish, bread, etc.
