Ingredients

  • 1 qt. persimmons
  • 2 c. hot milk
  • 1 c. sugar
  • 2 eggs
  • 1/2 tsp. salt
  • 2 c. flour
  • 1/2 c. butter
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder

Method

  • Add some raisins (to taste), dates, coconut and nuts (if desired).
  • Put persimmons in colander and set in bowl.
  • Pour hot milk over them and work pulp through colander.
  • Add goodies to it. Pour into baking pan and cook until fork comes out clean and nice and brown.
  • Good plain or with cream cheese frosting or Cool Whip on top.
