Ingredients
- 8 ounces penne pasta
- 2 teaspoons garlic, minced
- 3 tablespoons olive oil
- 4 ounces roasted red peppers, sliced
- 6 ounces Baby Spinach
- 4 ounces fat free feta cheese
Method
- Cook 8 oz penne pasta until al dente.
- In a pan over medium heat, soften 2 tsp minced garlic in 2 Tbsp olive oil.
- Add 4 oz sliced roasted red peppers and 6 oz baby spinach.
- Cook until spinach wilts.
- Add pasta to skillet, sprinkle with 4 oz fat-free feta, and toss.
