Ingredients

  • 2 1/4 lbs floury potatoes, peeled and cut into 1 1/2-inch pieces
  • 6 tbsp (3/4 stick) butter, softened
  • 1/4-1/3 cup hot milk

Method

  • Place potatoes in medium saucepan; cover with water and a pinch of salt. Bring to a boil on high heat. Reduce heat to medium and simmer, partially covered, 15-20 mins, until tender. Drain.
  • Return potatoes to the pan and shake over a medium heat to dry them out. Remove from heat and mash well. Beat in butter and enough milk or cream for a smooth consistency. Season to taste.
