Ingredients

  • 3 lb. lean beef
  • 1 qt. water
  • 3 tsp. salt
  • 5 cloves garlic, chopped
  • 1 tsp. marjoram
  • 1 Tbsp. sugar
  • 1/4 c. liquid shortening
  • 8 chili pods or 6 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. red pepper
  • 3 Tbsp. paprika
  • 6 Tbsp. corn meal
  • 3 Tbsp. flour and 1 c. water (for thickening)

Method

  • Heat oil in large pot.
  • Add meat; cook until almost brown. Add water.
  • Cook, covered, over low heat for 1 1/2 to 2 hours. Add remaining ingredients, except thickening; simmer for 30 minutes.
  • Mix thickening ingredients; add to chili mixture.
  • Cook 5 minutes while stirring.
