Ingredients

  • Baking potatoes, peeled, 1 per person
  • Vegetable oil for deep frying

Method

  • At least 15 min or possibly up to 5 hrs before serving.
  • Slice potatoes into 3" x 3/8" strips.
  • Rinse potato strips in colander under cool running water.
  • Drain on paper towels.
  • Fill deep fat frying or possibly heavy Dutch oven with 2" oil.
  • Heat to 325 degrees.
  • Pre-fry 3 to 4 min at 325 degrees.
  • Remove from oil, place on paper towel.
  • Cold at room temperature, 15 min to 5 hrs.
  • Heat oil to 375 degrees.
  • Fry potatoes again 2 to 3 min till golden.
  • Drain on paper towels.
  • Salt and serve.
