Ingredients
- Baking potatoes, peeled, 1 per person
- Vegetable oil for deep frying
Method
- At least 15 min or possibly up to 5 hrs before serving.
- Slice potatoes into 3" x 3/8" strips.
- Rinse potato strips in colander under cool running water.
- Drain on paper towels.
- Fill deep fat frying or possibly heavy Dutch oven with 2" oil.
- Heat to 325 degrees.
- Pre-fry 3 to 4 min at 325 degrees.
- Remove from oil, place on paper towel.
- Cold at room temperature, 15 min to 5 hrs.
- Heat oil to 375 degrees.
- Fry potatoes again 2 to 3 min till golden.
- Drain on paper towels.
- Salt and serve.
