Ingredients

  • 1 1/2 c. scalded milk
  • 2 cakes yeast or 2 pkg. yeast (dissolved in 1/2 c. warm water)
  • 1/2 c. sugar
  • 1/3 c. butter
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1 c. mashed potatoes
  • 4 to 5 c. flour (more flour, if using active yeast in water)

Method

  • Mash potatoes and put in large mixing bowl.
  • Add butter, sugar and scalded milk.
  • When lukewarm, add eggs and yeast.
  • Add salt and flour.
  • Place in greased bowl and let rise.
  • Punch down and let rise again.
  • Roll out to about 1/2-inch thick.
  • Cut doughnuts and let rise until about double in size.
  • Fry in deep fat at 375°.
