Ingredients
- 1 c. flour
- 4 tsp. baking powder
- 1 c. yellow corn meal
- 1 c. milk
- 1/4 c. sugar
- 3/4 tsp. salt
- 2 eggs
- 1/4 c. soft butter
Method
- Mix together flour, sugar, baking powder, salt and stir in cornmeal.
- Add eggs, milk and shortening.
- Beat until smooth.
- Do not overbeat.
- Pour into greased 9 x 9 x 12-inch pan.
- Bake at 425° for 20 to 25 minutes.
- Can double the recipe and pour into greased 9 x 13-inch pan and bake a little longer.
